Mixed Berry Blast Freezer Jam

Freezer jam is a delicious and fun way to preserve berries and other summertime fruits. With this mixed berry blast freezer jam you can have all of your favorite berries in a jam year-round. Great on toast, bagels and English muffins.

Ingredients
  • 4 cups blackberries, raspberries and/or mulberries, caps removed
  • 4 cups sugar
  • 1/4 teaspoon lemon peel
  • 3 ounces fruit pectin
  • 2 tablespoons lemon juice
Instructions
  1. Crush the berries and carefully measure out 2 cups of the mixture.
     
  2. Combine the 2 cups of crushed berries, sugar and lemon peel in a bowl.
     
  3. Let stand for 10 minutes to macerate; mix the pectin and the lemon juice.
     
  4. Add to the berry mixture and stir constantly for 3 minutes.
     
  5. Carefully pour the mixture into jelly jars and cover with lids.
     
  6. Allow to stand at room temperature for 2 hours or until the jam is set. Freeze until ready to use. 
     

Yields: about 2 pints.
