Marinated Mushroom

Ingredients
  • 3 tb olive oil
  • 4 shallots, chopped
  • 4 tomatoes, skinned and chopped
  • 4 peppercorns, crushed
  • 6 coriander seeds
  • 1 bay leaf
  • 1 sprig fresh thyme
  • salt
  • 1 pound mushrooms
  • 4 tb dry white wine
  • 2 tb tomato puree
  • chopped parsley to garnish
Instructions

Heat the oil in a pan, add the shallots and fry until soft. Add the tomatoes, peppercorns, coriander seeds, herbs and slat to taste. Stir in the mushrooms and wine, cover and simmer for 10 minutes. Transfer the mushrooms to a serving dish. Discrad the herbs. Bring the cooking liquor to the boil and boil for 5 minutes until well reduced. Add the tomato puree and spoon over the mushrooms. Sprinkle with parsley and chill before serving.
