Authentic Figs in Syrup

Ingredients
  • 3 pounds sugar
  • 1 cup (more or less) white wine vinegar
  • the zest of 1/2 a lemon
  • 6 to 7 pounds figs
Instructions

Put sugar, vinegar and zest in a pot large enough to hold everything. Bring to a boil, add figs, cover and simmer gently for at least 2 1/2 hours. Probably closer to 3 hours. The concept here is about half the weight of figs in sugar. The figs will add to the juices and make a spectacularly heavy syrup. They can be put up in jars and finished in a BWB.
