Ingredients

  • 1 cup oat flour
  • 1 cup flax seed meal
  • 1/4 cup almond meal
  • 1/4 cup oatmeal, uncooked
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1/3 cup jam of your choice

Instructions

  1. Preheat oven to 375 degrees F.

  2. Butter a pie plate or an 8x8 baking pan.

  3. In a large bowl combine oat flour, flax meal, almond meal, oatmeal, brown sugar,baking powder and salt. Stir to combine.

  4. Add melted butter and vanilla.

  5. Push half of the mixture into prepared pan.

  6. Spread jam evenly.

  7. Add the remaining granola mixture. Using your fingers try to evenly spread the top layer with your fingers. If there are gaps they will cook together to create an even crust on top.

  8. Bake for 20-25 minutes. Let cool.

Does anyone know if this would be considered Gluten Free? We have a family at my church where one of the girls has Celtic Disease, so I'm always looking for Gluten Free stuff for the bake sales.

HelloI too have celiac and this is why I created the recipe. As long as the oatmeal that you are using says that it is certified gluten free, you will be fine. I missed eating the morning cereal bars and the ones I did try from the store tasted odd. My family thought this was amazing! Please let me know how yours turned out.
