Slow Cooker Eight Layer Casserole

Layer upon layer of pure goodness. This Eight Layer Casserole has everything your body needs. From vegetables to bacon to even more vegetables and bacon, it has it all. With every bite you will be thinking that this is the best slow cooker recipe.

Cooking Time: 5 hr

Ingredients
  • 1/2 pound lean ground beef
  • 2 tablespoons imitation bacon bits
  • 1 small onion, chopped
  • 1 can (15-ounces) tomato sauce
  • 1/2 cup water
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2/3 cup long-grain rice
  • 1 can (8.75-ounces) whole-kernel corn, drained
  • 1/2 cup green bell pepper, chopped
Instructions
  1. Crumble ground beef evenly over bottom of a slow cooker. Sprinkle with bacon bits, then onion.
     
  2. In a medium bowl, combine tomato sauce, water, chili powder, salt, and black pepper; pour half over beef and onion layers.
     
  3. Sprinkle rice evenly over top, then corn. Top with remaining tomato sauce mixture, then bell pepper.
     
  4. Cover and cook on low about 5 hours or until rice is tender.
