Cooking MethodSlow Cooker

Ingredients

  • 1 chicken
  • 1 stick butter
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • 1 pan cornbread, crumbled
  • 6 slices bread, crumbled
  • 1/4 pound Ritz crackers, crumbled
  • 2 teaspoons thyme, sage or poultry seasoning
  • 5 1/2 cups chicken broth
  • 4 eggs, beaten
  • 1/2 cup milk
  • 1/2 teaspoon baking powder

Instructions

  1. Simmer large chicken until done. Remove and let cool. Reserve broth. Remove chicken from bones and set aside.
     
  2. Saute onions and celery in butter. Pour this mixture over bread crumbs and Ritz crackers in a very large mixing bowl. Add seasonings and toss together.
     
  3. Pour enough broth into mixture to moisten. Add beaten eggs and mix together well.
     
  4. Add baking powder, milk, and remaining broth. Mixture should be very slushy.
     
  5. Add chicken. Pack tightly into a 5 quart slow cooker Cover and cook on high for 1 hour. Reduce to low and cook 4 to 8 hours.

How much is a pan of cornbread

Hello doeschers, I believe this recipe does call for you to mix the chicken in with the stuffing. Sorry for the delayed response. Thanks for leaving feedback though!

Do you mix the chicken with the stuffing or leave it on top?

Chef 6097211..... In the recipe the cornbread is crumbled. This is part of the bread that is in step 2 along with the 6 slices of bread and the Ritz crackers. Hope this helps!

Sounds good, but what do you do with the corn bread? Lots of receipes leaving instruction out, what's with that?
