Ingredients

1 box lemon cake mix with pudding
2 1/4 cups thawed Cool Whip
1 egg
powdered sugar for rolling in

Instructions

Preheat oven to 350 degrees F.
Mix together all ingredients except powdered sugar.
Dough will be sticky.
Take by teaspoon and roll in powdered sugar until covered.
Bake at 350 degrees F for 8-10 minutes.

These cookies are WONDERFUL. They are very moist and soft and so easy to make. I have made them using lemon cake and spice cake and am going to try chocolate cake next. The recipe I have says it makes 20 cookies, that person must make awfully big cookies because I got 3 dozen the last time I made them and still had a nice size cookie. Everyone I served them too just loved them. It is my new favorite "go to" cookie recipe.
