Rotel Tomato Chicken

Ingredients

  • 1/4 cup olive oil
  • 1 T lime juice
  • 1/8 t crushed red pepper
  • 4 chicken breast halves, skinned, boned and cut into 1.5" stips
  • 1 clove minced garlic
  • 1/2 pound fettuccine
  • 2 T margarine
  • 1 t grated lime rind
  • 1 can RoTel tomatoes

Instructions

In gallon size zip lock bag, combine first 3 ingredients. Add chicken, seal, shake well and refrigerate for 15 minutes. Remove chicken and discard marinade. Spray skillet w/ vegetable oil spray (Pam etc.). Add chicken and garlic, cook until chicken is nearly done. Add Ro*Tel, heat to a boil. Reduce and simmer 10 minutes or until chicken is done. Cook fettuccine according to package directions; drain. Add margarine and lime rind; toss well and keep warm. Arrange fettuccine on palter, top with chicken and sauce. Sprinkle with parmesan cheese (Kraft Red Pepper parmesan does well). 4 servings

We use Rotel, rice, and cheese to make a cheesy chicken dish, but I like the idea of making a chicken and Rotel dish to use with pasta. That sounds like a fun take on something we already love anyway. We're making cheesy chicken and rice tonight for a filling dinner.
