Ingredients
  • 1 1/2 cups firmly packed light brown sugar
  • 1 teaspoon vinegar
  • 1 egg white (room temperature)
  • pinch of salt
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts (optional)
  • food coloring (optional)
Instructions

Combine the sugar, 1/2 cup water, and vinegar. Mix well. Bring to a boil over medium heat stirring until sugar is dissolved. Cover. Boil for 2-3 minutes. Uncover. Wash down sides of pan with brush dipped in cold water. Boil without stirring until firm ball stage (244 degrees F). While syrup is boiling, beat egg white and salt in large bowl of mixer until still. When syrup is ready, turn on mixer and pour syrup slowly into the beaten egg white. Beat until creamy. Stir in vanilla, and food coloring (if using), and nuts (if using). Drop by teaspoonfuls onto sheet of waxed paper. Store in airtight container. Divinity doesn't keep well. It should be eaten in a few days. It is difficult to make if the weather is damp, if dry conditions prevail it is very easy.
