Acadian Pralines

These pralines are delicious and so easy to make. Make a few batches of these and tie them in plastic wrapping for great holiday gifts for friends or co-workers.

Ingredients
  • 1 cup sugar
  • 1/2 cup heavy cream
  • 3 Tbs. dark corn syrup
  • 1/16 tsp. salt
  • 1/16 tsp. soda
  • 1 cup pecan halves
  • 1/2 tsp. vanilla
Instructions
  1. In a heavy 2 quart saucepan, stir together sugar, cream, corn syrup, baking soda and salt. Cook over medium heat, stirring a few times until sugar dissolves and mixture reaches 234 degrees on a candy thermometer. Remove from heat.
     
  2. Add pecans and vanilla, stirring until creamy and mixture covers pecans with a slightly opaque coating. Drop by heaping teaspoonfuls onto wax paper. Cool. Store between layers of wax paper in a tightly covered tin box.
