Cake Mix Orange Angel Cake

With just five basic ingredients you can create one of the most outrageously delicious desserts of all time. This recipe for Cake Mix Orange Angel Cake couldn't be simpler and you'll love that it's a recipe using cake mix. The orange flavor comes from orange juice, grated orange peel and mandarin orange segments, so you can rest assured you're getting a great dose of vitamin C with this creative cake recipe! Make this for a summer potluck or a spring get-together with friends... they're sure to go crazy for this angel cake!

Serves: 12

Cooking Time: 30 min

Ingredients
  • 1 package (6 1/5 ounces) Angel Food cake mix
  • 1 cup orange juice, divided
  • 2 tablespoons grated orange peel
  • 1 tablespoon cornstarch
  • 1 (11-ounce) can mandarin orange segments in light syrup
Instructions
  1. Preheat the oven to 350 degrees F.
     
  2. In a medium glass or metal bowl, combine cake mix and 1/2 cup orange juice. Beat on medium speed of a mixer until well mixed -- about 1 minute.
     
  3. Carefully fold in the grated orange peel.
     
  4. Pour mixture into an ungreased loaf pan. Bake for 25-30 minutes or until the top is golden brown; do not underbake.
     
  5. Cool the loaf pan on its side to ensure a high cake for at least 1 hour or until cooled.
     
  6. For the orange sauce, combine the cornstarch with 1/4 cup of the orange juice. Mix until well blended.
     
  7. In a small saucepan, combine the juice from the mandarin orange segments and the remaining 1/4 cup orange juice. Heat until boiling and add cornstarch mixture, stirring constantly until thickened.
     
  8. Remove from the heat and add the mandarin orange segments. Chill until ready to serve.
     
  9. To serve, top thin slices of orange angel cake with the orange sauce.
