Surprise Potato Dumplings

Enjoy a delicious and cheap meal when you prepare these Surprise Potato Dumplings for dinner. These tasty pillows of potato-y flavor include a special surprise inside -- a couple of crunchy croutons nestled inside each dumpling. This isn't one of those ordinary potato dumpling recipes. Ingredients

  • 5 Russet potatoes, unpeeled
  • 1 1/2 cup flour
  • 1 egg
  • 1 tablespoon salt
  • 1 pinch black pepper
  • 3/4 teaspoon grated onion
  • stuffing croutons, not seasoned

Instructions

  1. Cook potatoes in boiling water until tender; drain and cool. Refrigerate overnight.
     
  2. The next day, peel and grate potatoes.
     
  3. Add one cup of flour, egg, salt, pepper and onion; mix until smooth.
     
  4. Add additional flour gradually to form a dumpling mixture that will hold together.
     
  5. Form onto balls the size of an egg.
     
  6. Into each dumpling insert 2-3 croutons, then again form into a ball.
     
  7. When ready to cook, drop dumplings into gently (not heavy boiling) boiling salted water and cook 8 to 10 minutes. Dumplings are done when they turn and float to top and are no longer gummy inside.

These are totally different from the potato dumplings that I am used to. I would never have thought to tuck a crouton into the middle, but I bet the crunch factor would be delightful. I'm guessing that if these sit for too long though, or are saved for leftovers, the crouton would go mushy. Does anyone have any experience with this? I would love to try stuffing the dumplings with something else too. Maybe a tiny piece of cheese? It would be really good. I saw a version on a cooking show where they stuffed the dumpling with a tiny frozen cube of gravy...yum right!?!?! These sound really delicious.

I have never used potatoes to make dumplings before, it was always flour we used in our recipe. I want to try these to see how they will turn out because I am curious about the texture. I too like the idea of the croutons in the middle to give the dumpling a little crunch.

I have always loved dumplings. These potato dumplings sound like a very cool variation on the regular dumplings recipes I'm used to making. I especially like the little added surprise of the croutons nestled inside each one. These are going to turn out so delicious, and just a little pleasantly different from what I'm used to making!
