Prosciutto and Mascarpone Pinwheels

These pinwheels are great alone or on toast points or crackers. They are colorful and flavorful for any occasion!

Serves: 6

Preparation Time: 15 min

Ingredients
  • 2 ounces prosciutto, sliced thinly but evenly
  • 4 ounces mascarpone cheese
  • 3 stalks of scallions, finely chopped
  • 1 red bell pepper, seeded and finely chopped
Instructions
  1. Slightly beat the mascarpone so that it can evenly be spread.
     
  2. Add the chopped scallions, and pepper.
     
  3. Spread a piece of plastic wrap on a work surface.
     
  4. "Shingle" the prosciutto onto the wrap.
     
  5. Spread the mascarpone mixture evenly on top of the slices.
     
  6. Roll the prosciutto up jelly roll style and wrap tightly in the plastic wrap.
     
  7. Refrigerate until firm.
     
  8. To serve, unwrap the roll and slice.
Notes

Excellent on toast points, crackers or pita chips. May be prepared ahead and refrigerated until ready to serve.
