Coconut Shrimp with Orange Mustard Sauce

What's a party without shrimp? Make this delicious appetizer, a far cry from the standard shrimp and cocktail sauce, and you'll be a hit wherever you go. People will be clamoring for more!

Serves: 6

Preparation Time: 15 min

Cooking Time: 15 min

Ingredients
  • 1 1/4 pounds unpeeled large shrimp
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon paprika
  • 1 1/4 cups beer
  • 2 cups shredded coconut
  • Vegetable oil
  • Orange Mustard Sauce (recipe below)
Instructions
  1. Peel and devein the shrimp leaving the tails intact.
     
  2. Combine flour, salt, pepper and paprika in a medium bowl, stirring well. Make a well in center of the flour mixture.
     
  3. Gradually add beer stirring until batter is smooth.
     
  4. Dip shrimp in batter then dredge in the coconut. Fry shrimp in hot oil until lightly browned. Drain in paper towels.
     
  5. Serve with Orange Mustard Sauce (recipe below).

 

Orange Mustard Sauce

  • 1/4 cup plus 2 tablespoons orange marmalade
  • 1/4 cup plus 2 tablespoons orange juice
  • 2 tablespoons Dijon mustard


Combine marmalade, juice and mustard in a small bowl, stirring well. Makes 1 cup.
