Pumpkin, Squash, Yam, and Cheddar Pot Pie
This vegetarian-friendly Pumpkin, Squash, Yam, and Cheddar Pot Pie is a must-try. It's perfect for the fall when pumpkins and squashes come into season. A layer of pumpkin, leeks, garlic, and rosemary sits at the base of the pot pie. Next is a layer of butternut squash, raisins, sweet potatoes, and a whole host of other delicious ingredients. It's the best fall foods all crammed into one dish. Make this savory pot pie into a family classic by serving it as part of Thanksgiving dinner!

How can you go wrong with this pot pie recipe? If nothing else it has to be very filling to say the least. I do not have a lot of squash recipes and the ones that I do, the squash is the major star and the dish is sort of "bland". I love the ingredients list here. I cannot wait to try it.

Pot pies are one of my favorite comfort foods. This recipe kind of leans toward a healthy version of a pot pie and actually sounds good. This would be a nice alternative to the Thanksgiving or fall table for that matter.
