"Make these crock pot hasselback potatoes as a side dish tonight. This easy slow cooker recipe is perfect for a weeknight. Grab potatoes and herbs that you love and throw them in the crock pot. Ingredients

  • Potatoes
  • Herbs (I used rosemary, thyme, and garlic)
  • Olive Oil
  • Cheese
  1. Slice potatoes almost all the way through. One way to do this is to place skewers on both sides of the potato when you are slicing to keep your knife from going all the way through. Place the potatoes in the slow cooker. Drizzle with olive oil and add any herbs that you think will work together well. Cover and cook on high for 3-4 hours. Check that the potatoes are done. Add your choice of cheese to the tops of the potatoes and cook until cheese is melted. Remove from slow cooker and serve to your family!

Hasselbacking (if that's even a word!) is so trendy and really changes up our meal. You can hasselback so many different foods (chicken breast, zucchini, apples, etc) but I especially love the white and sweet potatoes. Their skin gets crispy while the inside remains tender. The whole product is seasoned and tastes great. Such a nice recipe!

I'm starting to really enjoy crock pot prep and leave 'em recipes. I'm new to crock pot cooking and this looks like an easy first-dish to start with. I also like Hassleback potatoes and think this recipe will be easier than my method. Plus, I can leave this with my fianc for the day and come home to nice, garlic potatoes after work. Definitely giving these a try before the end of the year. Thanks for sharing!
