Ingredients
- 4 eachs Corn - grilled and cut off the cob
- 2 tablespoons mayo
- 1 teaspoon red pepper flakes
- 1 each fresh lime (juice and zest)
- 1/2 cup cojita cheese
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions

Preheat oven to 350.

In a small bowl, mix together mayo, cheese, lime juice and zest, red pepper flakes, salt and pepper.

Stir mayo/cheese mixture into corn.

Cook uncovered for 15-20 minutes.

Serve hot.
