"These easy and delicious fruit popsicles are yogurt based and have only natural sweeteners. You can feel good about giving them to your kiddos to beat the heat this summer! Popsicles are always a great after dinner option at house Macheesmo. We seem to have unending boxes of them in our freezer, either that we bought or that other families brought to our house for summer hangouts. I don’t mind the sugar in popsicles – it’s kind of a rite of summer in my opinion, but I did want to challenge myself a bit to see if I could come up with a delicious popsicle without the added sugar."

Ingredients

  • 2 cups Greek Yogurt, divided
  • 6 ounces fresh blueberries
  • 1 cup honey, divided
  • 2 kiwi fruit, peeled
  • 6 mint leaves
  • 1 cup fresh strawberries
  1. In a food processor, combine about 3/4 cup of Greek yogurt with strawberries and 1 tablespoon honey. Blend until smooth and set aside.

  2. In food processor, combine 3/4 cup Greek yogurt with kiwi, mint, and 1 tablespoon honey. Blend until smooth.

  3. Repeat blending with last of the yogurt, blueberries and 2 tablespoons honey.

  4. Layer fillings in popsicle mold. I prefer strawberry first, then kiwi, then blueberry last.

  5. Insert popsicle sticks and freeze solid.

  6. Popsicles will keep fine in the fridge for a month or so but then they might get freezer burned or start picking up off flavors.

Is there something besides kiwi I can use in this popsicle? My daughter is allergic to that fruit. I love a good popsicle on hot, summer days. I like that the fruit is refreshing and healthier for you than ice cream. I love the berries in the recipe. I am thinking maybe a lemon, orange, or apple might go good with this dessert.
