My sister-in-law and husband adopted her brother, Hunter, who we call a string bean. This sounds silly, and it is, but whenever I hear the word "snickerdoodle," I think of our three sweet, little furry pups and can't help but smile. Ingredients

  • 1 cup whole raw cashews
  • 1 cup raw almonds
  • 1 cup flaked sweetened coconut
  • 2 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon sea salt
  • 10 ounce Medjool dates, pitted
  • 1 teaspoon coconut extract

Instructions

  1. Line a baking sheet with parchment paper.

  2. Using a food processor fitted with the "S" blade, process the cashews, almonds, coconut, cinnamon, nutmeg, and salt until finely ground.

  3. Add the dates and coconut extract and process until the dough becomes very sticky.

  4. Using a small spring-loaded scoop or a tablespoon, scoop the mixture and roll it in your hands to form a smooth ball; repeat to make 20 balls.

  5. Place the balls on the lined baking sheet and transfer to the fridge or freezer for 1 hour.

  6. Store the snack bites in the fridge for up to 2 weeks.
