We love the name "snickerdoodle," but if you want to call these cinnamon mug cakes, it's fine by us.

Snickerdoodle Mug Cake

Snickerdoodles are a “first cookie love” for a lot of us. The soft, fluffy sugar cookie texture and warm cinnamon flavor are a heavenly combination. It turns out that those traits also make for a pretty darn good snickerdoodle mug cake. This recipe has everything you love about snickerdoodle cookies, but you can make it in your microwave in about five minutes. We’re almost sorry for making it so easy to cook this snickerdoodle mug cake, but not quite. It’s actually pretty fun to make a little cinnamon cake whenever you want.

From the Chef: Snickerdoodles are one of my favorite types of cookies--especially in the fall when cinnamon is at the peak of its popularity. I usually like to add a bit of whipped cream and extra cinnamon on top to really wrap up the flavor.

Ingredients

  • 1/4 cup plus 2 tablespoons all-purpose flour
  • 3 tablespoon sugar
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup whole milk, room temperature
  • 2 tablespoon salted butter, melted and cooled
  • 1/2 teaspoon vanilla extract

Instructions:

  1. In a small bowl, whisk together the flour, 2 tablespoons of the sugar, the baking powder, and 1/4 teaspoon of the cinnamon until completely combined. Blend in the milk, butter, and vanilla until the batter is smooth.

  2. In a separate bowl, combine the remaining 1 tablespoon of sugar and 1/4 teaspoon of cinnamon. Set aside.

  3. Scoop a spoonful of batter into a large, microwave-safe mug, then sprinkle with a spoonful of cinnamon sugar. Alternate layers, ending with the cinnamon sugar.

  4. Microwave on high for 1 to 1 1/2 minutes until it puffs up.

  5. Allow to cool for a couple of minutes before serving.
