That's where this healthier version of Johnny cakes comes in. Made with cornmeal and whole wheat flour, this Southern breakfast has been transformed into a dish that you don't have to feel guilty about. Make these johnny cakes for a delicious breakfast that will have you smiling throughout the whole day.

Ingredients

  • 1/2 cup whole wheat flour
  • 1 cup self-rising cornmeal
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher salt
  • 2 large eggs, lightly beaten
  • 1 cup buttermilk
  • 2 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, melted
  • Maple syrup, optional

Instructions:

  1. In a large bowl, combine the flour, cornmeal, baking powder, sugar, and salt.

  2. Whisk in the eggs, buttermilk, vanilla, and butter.

  3. Coat a griddle or skillet with cooking spray and heat over medium-high heat.

  4. Drop about 1/4 cup of the batter per cake onto the griddle and cook for 2 to 3 minutes per side until golden brown.

  5. Serve with warm maple syrup, optional.
