Baked Caramel Corn

Ingredients

  • 1 cup margarine
  • 2 cups brown sugar
  • 1/2 cup corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 6 quarts popped popcorn
  • Vanilla

Instructions

  1. Make popcorn and put in a large roasting pan. Set aside.
     
  2. Melt margarine in pan. Stir in sugar, corn syrup and salt.
     
  3. Bring to a boil stirring constantly. Boil without stirring for 5 minutes. Remove from heat.
     
  4. Stir in baking soda and vanilla. Pour over corn, mixing well.
     
  5. Bake at 250 degrees F for 1 hour. Stir every 15 minutes.
     
  6. Remove from oven. Cool, break apart and store in tightly covered containers.

Who does not like caramel corn? I believe the only thing missing from this recipe are some type of nuts. That would surely be a nice addition to the mix.

Caramel corn is one of my favorite treats. I have never even considered making my own. I am a DIY'er to the 10th degree but never caramel corn. The ingredients are simple and easy to acquire and the directions well written out. I just may be making some caramel corn this week.

Hello Karenf, I think it's impossible to eliminate the corn syrup, but you could try substituting with Splenda or even Stevia. Just start out with like a 1/4 cup of substitute sugar and then maybe do the other half with 1/2 cup of brown sugar. Splenda and Stevia are very potent. I can't make any guarantees but it's worth giving it a try. Let us know how it turns out. Thanks!

Questionbr br I'm Diabetic, but LOOOOOOOOOOOOVE Caramel Corn. I have a sugar cookiebr recipe that I substitute 50% of the sugar with Spelnda. Would this also work for the caramel corn recipe since it's still got corn syrup?br
