Ingredients

  • 2 cup whole milk
  • 2 cup pasta (uncooked)
  • salt and pepper to taste
  • 1 cup Cheddar cheese, shredded
  • 1 cup Pepper Jack cheese, shredded
  • 4 strips bacon, cooked and crumbled
  • 1/2 medium yellow onion, caramelized

Instructions

  1. In a deep pot over medium-high heat, add milk, pasta and salt and pepper. Bring to a simmer, cook uncovered until pasta is al dente, about 8-10 minutes.

  2. Add cheeses and mix until melted.  Stir in bacon and onions.  Adjust seasoning to taste and serve.
