Blissfully Simple Chicken and Swiss

Ingredients

  • 3 boneless, skinless chicken breasts, halved
  • 1/2 cup flour
  • 6 thick slices French bread
  • 1 tablespoon butter
  • 2/3 cup white wine
  • 1/4 teaspoon pepper
  • 1/4 cup oil
  • 6 slices Swiss cheese
  • 1/2 pound mushrooms
  • 1 teaspoon salt

Instructions

  1. Pre-heat oven to 200 degrees F.
     
  2. Sprinkle chicken with flour. In a skillet, heat oil and brown chicken. Reduce heat, cover, and cook 15 minutes.
     
  3. Place bread slices topped with cheese on baking sheet. Heat in oven until cheese is melted.
     
  4. Slice mushrooms. After chicken has cooked for 15 minutes, remove chicken. Add butter and mushrooms to pan. Cook about 3 minutes.
     
  5. Push mushrooms to one side of pan; add wine, salt, and pepper. Return chicken to pan. Simmer until sauce is slightly thickened.
     
  6. Place chicken pieces on each bread slice. Spoon mushrooms and sauce over.
