One Casserole To Rule Them All. The name suggests a pretty tall order, however, you won't be disappointed when you take your first bite. Layer upon layer of cheese, chicken and corn tortillas may not seem like much, but this casserole is anything but ordinary.

You won't believe how much flavor is packed into this unassuming casserole. And let's just say, if you're a fan of cheese, this casserole is loaded with it! The chicken marinates in a variety of spices beforehand making it a stand out ingredient, and there's the perfect bit of crunch that comes from the corn tortillas and corn chips layered throughout.

Ingredients

  • 1 (10-1/2-ounce) can cream of chicken soup
  • 1 (10-1/2-ounce) can cheese soup
  • 1 (10-ounce) can Rotel tomatoes or diced tomatoes with chilies, undrained
  • 2 pound skinless boneless chicken breasts, cut into 1-inch cubes
  • 1 cup diced green pepper
  • 1 cup diced onion
  • 1 clove garlic, finely minced
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 2 teaspoon ground cumin
  • 1 (16-ounce) bag Mexican blend shredded cheese, divided
  • 10 corn tortillas, cut or torn into quarters
  • 3 cup crushed corn chips

Instructions

  1. In a large bowl, combine cream of chicken soup with cheese soup and canned tomatoes. Mix well.

  2. In another bowl, combine chicken, garlic, pepper, onion, and spices. Mix together with a spoon or spatula until everything is evenly coated.

  3. In a greased or non-stick casserole dish, add a layer of the chicken mixture followed by a layer of the soup mixture. 

  4. Next, add a layer of corn tortillas followed by a layer of shredded cheese.

  5. Continue this layering until your casserole dish is nearly full or until you run out of ingredients. 

  6. In an oven preheated to 350 degrees F, bake for 20 minutes.

  7. When done, take out of the oven and spread a layer of crushed corn chips on top followed by a final layer of shredded cheese.

  8. Bake for 10 more minutes. Allow to cool slightly and serve.
