Ingredients

  • 1 cup brazil nuts
  • 1/2 cup almonds
  • 1/2 cup cashew nuts
  • 1 cup red cherries
  • 1/4 cup green cherries
  • 3 cup canned pineapple, drained
  • 1 cup raisins
  • 3/4 cup flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla

Instructions

  1. Measure nuts, fruit and dry ingredients into a large bowl, reserving some for decoration.
     
  2. Cut up large pieces of pineapple. Mix eggs and vanilla until thoroughly combined, add to other ingredients. Mix together.
     
  3. Line a microwave loaf pan or metal ring pan. Spray with baking spray.
     
  4. Press mixture firmly into pan. Decorate top with reserved fruit, say cherries and brazil nuts.
     
  5. Bake at 250 degrees F for 2 and 1/2 hours to 3 hours until the cake feels firm.
     
  6. Cover loosely with paper if it is browning too quickly.
