7 Up Jello Dessert

7-Up Jello Dessert

Add your favorite treats together. Using 7-up, lemon jello, bananas and some other yummy ingredients you can make an amazing Jello dessert treat for you and your guests.

Serves: 10

Preparation Time: 10 min

Cooking Time: 20 min

Ingredients
  • 2 (3-ounces each) package of lemon Jell-O or orange pineapple Jell-O
  • 1/2 cup pecans, chopped
  • 1 cup small marshmallows
  • 2 bananas, mashed
  • 2 cups boiling water
  • 2 cups 7-UP
  • 1 can (20-ounces) crushed pineapple (drain well and save juice)
  • For the Topping:
  • 1 cup pineapple juice (if there isn't enough, add water)
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 egg, slightly beaten
  • 2 tablespoons butter, melted
  • 1 container of Cool Whip or Dream Whip
  • 1 teaspoon coconut flakes (optional)
Instructions
  1. Mix the jello and boiling water. Cool.
     
  2. Add the 7-UP.
     
  3. When mixture is about to congeal, add the pineapple.
     
  4. Add the bananas, pecans and marshmallows.
     
  5.  Pour into a 9x13 inch container and let chill until firm.

     

For the Topping:

  1. Mix the sugar and flour.
     
  2. Add the beaten egg and butter.
     
  3. Add the pineapple juice.
     
  4. Cook over low heat until thickened, stirring as it cooks, until mixture is thick.
     
  5.  Let cool, fold in whipped topping and coconut.
     
  6. Spread this topping over the firm chilled base.

This looks like a Jello recipe from the 1960's or 70's. I would use orange or lime jello, because I don't think orange pineapple jello is a thing any more. I think I'll make it for a Spring family get together.

My family really likes this recipe. But, I find that it takes a bit more time than some of the other jello salad recipes I make. I always use sugar free jello. My family doesn't know that. I also use 1 lemon jello and 1 lime jello. I don't use pecans because my husband can't have them. It is delicious and worth the extra work. I am wondering if others have made substitutions? Always love hearing new suggestions!

This sounds very similar to a recipe my mom used to make. It was de-lish but I am anxious to try this recipe as well.

Does 2 boiling water mean 2 cups of boiling water?
