Southern Smothered Greens

There's nothing quite like southern food, and greens are a classic side dish in the South. This recipe for Southern Smothered Greens is an easy side dish recipe for collard greens fried with ham and bacon. They taste just like the greens your grandma used to make, and the bacon and ham make them so good you'll forget you're eating a vegetable. Serve these smothered greens alongside any meal for a comforting southern feast.

  • 1 bunch collard greens
  • 2 cups ham, chopped
  • 3 slices bacon
  • 1 1/2 tablespoon accent (optional)
  • 2 tablespoons sugar
  • 1 1/4 cup water
  • 1/2 teaspoon salt
  • ground pepper, to taste


  1. Wash greens thoroughly and cut fine. In a heavy skillet, fry bacon until very crisp, remove and set aside. In the same pan, fry ham until brown.
  2. Crumble the bacon and return it to the pot. Add greens and water. Sprinkle sugar and accent over greens. Cover and simmer, about 30 minutes, stirring once the greens have simmered down. Sprinkle with salt and pepper.
