Old Finnish Mushroom cabbage Casserole

Ingredients

  • 1/3 cup pearl barley
  • 1 egg, lightly beaten
  • 1 1/2 cup milk
  • 1 teaspoon sea salt
  • 4 cups cabbage, shredded
  • 1/4 teaspoon white pepper
  • 1 cup carrots, grated
  • 1 tablespoon butter or oil
  • 2 cups of mushrooms, sliced
  • 2 tablespoons bread crumbs

Instructions

Soak the barley in milk 4 to 5 hours overnight. Preheat the oven to 400 F. Mix all the vegtables together, and add the milk-barley mixture. Add the lightly beaten egg, salt and pepper. Mix well. Grease a 2 quart ovenproof dish and pour the mixture in. Press down. Sprinkle the top with bread crumbs. Bake 1 1/2 hours.
