Boston Zucchini

Zucchini is an excellent, affordable food in the summertime and this Boston zucchini is a colorful and healthy side dish to any main course. It is said that the more colorful a dish is the better it is for you and with this recipe for summer squash you have green, yellow, purple and brown contrasting colors on your plate.

Ingredients

  • 1 clove garlic, chopped
  • 2 summer squash, sliced in 1/2-inch thick pieces
  • 2 green onions, sliced
  • 1 cup mushrooms, sliced (optional)
  • 1/2 teaspoon thyme
  • 1/2 teaspoon basil
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cup raisins
  • 1/4 cup chopped pecans (or other nuts)

Instructions

  1. Saute veggies, herbs, seasonings in olive oil for approximately ten minutes or until tender crisp.
     
  2. About two minutes before they are done, add the nuts and raisins.
     
  3. Stir till heated through.

Arleen I think you didn't realize that zucchini is also called summer squash as well as yellow squash, and the purple would prob be the raisins. Hope this helps you. BTW i have made this with the yellow squash and with a combination of the 2 squashes. Good luck to you.

How can this be '"Boston Zucchini" when it has no zucchini in it? I have tons of zucchini to use and thought this would be a new way to do it, but, oops, no zucchini. And the description says you have purple in it--what is purple?
