Turkey Parmigiana

  • 8 ounces uncooked fettuccine, broken in 3" pieces
  • 4 (4 ounce) turkey patties
  • 1/3 cup Italian style bread crumbs
  • 2 tablespoons olive oil or oil
  • 1/2 teaspoon dried Italian seasoning
  • 1/3 cup shredded fresh Parmesan cheese
  • 1 jar (14 oz.) spaghetti sauce
  • 1 cup shredded Mozzarella cheese

Heat oven to 400. Spray 13x9 inch baking dish with nonstick cooking spray. Cook fettuccine to desired doneness as directed on package. Meanwhile, coat turkey patties with bread crumbs. Heat 1 tablespoon of the oil in large skillet over medium-high heat until hot. Add turkey patties to skillet; cook 3-5 minutes on each side or until no longer pink in center. Drain fettuccine; return to saucepan. Add remaining tablespoon of oil and Italian seasoning; toss until well mixed. Place in bottom of spray-coated baking dish. Sprinkle with Parmesan cheese. Arrange patties over cheese. Top with spaghetti sauce; sprinkle with mozzarella cheese. Spray sheet of foil with nonstick cooking spray; cover baking dish. Bake at 400 for 25-30 minutes or until mixture is thoroughly heated and cheese is melted.
