Coconut Curried Pumpkin Soup

Ingredients

  • 2 tablespoons butter
  • 1 small onion, chopped (1/2 cup)
  • 1 clove garlic, minced (1/2 teaspoon)
  • 2 teaspoons curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (14 1/2 ounce) lower sodium chicken broth, plus 1 can water
  • 1 can (15 ounce) pumpkin puree
  • 3/4 cup unsweetened coconut milk

Instructions

  1. Melt butter in a large saucepan over medium heat. Cook onion 5 minutes, until softened.
     
  2. Add garlic, curry powder, salt and pepper; cook 1 minute more.
     
  3. Add broth, water, and purée; mix well. Reduce heat to low. Cook 20 minutes, stirring occasionally. Stir in coconut milk.
     
  4. Purée soup in a blender in several batches until smooth. Return to saucepan. Heat through before serving.
