Ultimate Healing Soup

Great for when you are trying to fight off a cold, Ultimate Healing Soup is a great way to warm the body and the spirits. Made with fresh vegetable and herbs, it's rustic flavor will help you fight the sniffles. There's something about soup recipes that make us feel a little better.

Ingredients

  • 3 carrots, chopped
  • 1 onion, chopped
  • 1 small head cabbage, cored and chopped
  • 2 quarts water
  • 2 cloves of garlic, minced
  • 4 teaspoons chicken bouillon granules
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon marjoram
  • 1 can (14.5-ounces) Italian-style stewed tomatoes, drained and diced
  • 2 celery stalks, chopped
  • 1 1/2 tablespoon olive oil

Instructions

  1. In a large stockpot, heat olive oil over medium heat. Stir in, onion and garlic, celery and carrots; cook until onion is transparent, about 5 minutes.
     
  2. Stir in water, bouillon, salt, and pepper and spices. Bring to a boil, then stir in cabbage. Simmer until cabbage wilts, about 10 minutes.
     
  3. Stir in tomatoes. And let simmer for another 40 minutes stirring occasionally.

This recipe contains the ingredients that pack nutrients and everything that helps you fight off a cold. The bone broth has some excellent anti-inflammatory agents that help with decongestions while the onions and garlic help ease the symptoms. chicken soup also packs a lot of calories that your body needs to fight off the infection

I agree with the fact that there is something about soup which makes us feel a little better. There is truly something heartwarming about soup. Maybe because it warms us up from the inside out! I love a good soup and always like to have some on the go in winter. I'm going to keep this recipe and make sure I make some.

I like that this soup recipe doesn't have heavy ingredients like chicken, potatoes etc because, in reality, when you have a cold your throat sometimes hurts and swallowing can be difficult. The lovely blend of herbs and vegetables gives lots of flavor and nutrients. This is perfect since loss of appetite is also common when you're suffering with the cold.

This is a great recipe! I made this for a friend who is sick and hasn't had much of an appetite. She loved it. She said it was flavorful yet not over powering and easy for her to digest and keep down. I have frozen the leftovers and this is my new go to.

This recipe looks like a yummy combination of chicken noodle soup and minestrone! I have read that chicken broth does actually help minimize colds, and the added veggies make this a delicious and nutritious soup to make when you're sick or any time! You could easily switch up and/or add extra vegetables and also beans to make the soup even heartier. Looks like a winner!

This recipe is so good. I add a can of cannellini beans for added protein. And it adds a lot to the taste.

I see both celery and olive oil at the bottom of the list. Were they not there before? Or did someone just not read all the way through?

I would think 3 ribs celery and 2 T oil should do it!
