Warming Winter Chicken Soup

When the weather is chilly or downright frigid, there's nothing better than a piping hot bowl of delicious soup. This Warming Winter Chicken Soup recipe features all of the hearty ingredients that soothe our souls during the cold winter months. With chicken, onion, peas, carrots, celery and more, there are so many wonderful flavors to love in this simple chicken soup recipe. Stash this away with your other recipes for chicken soup; you never know when you're going to need a warm and comforting chicken dinner.

Cooking Time30 min

Ingredients

  • 1 whole boneless chicken breast, skin-on
  • 1 onion, chopped
  • 1/4 pound fresh peas
  • 2 carrots, sliced
  • 3 stalks celery, sliced
  • 1 bunch green onion, chopped
  • noodles

Instructions

  1. Put chicken into a big pot with water to cover, add chopped onion and a few peppercorns. Bring to boil and simmer gently for 20 minutes.
     
  2. As you prepare vegetables, put all clean vegetable discards (celery tops, pea pods, carrot scrapings) into simmering broth. After 20 minutes, remove chicken and strain broth. Reduce broth if necessary.
     
  3. Return broth to simmer, add peas and carrots, simmer 5 minutes.
     
  4. Add celery, simmer 5 minutes.
     
  5. Add cut up chicken and green onions.
     
  6. Stir in noodles and simmer until noodles are barely tender.
