A soup recipe that contains bacon, ham, potatoes and 2 types of cheese, is one I'll be dreaming about. Say hello to the Ultimate Comfort Potato Soup recipe. This is a great soup to make anytime you need a hearty and truly comforting meal. It's perfect for those chilly, fall and winter days when you need a warm lunch to put you back in good spirits. I only speak for my family, but we have soups that we turn to every time the weather gets a little colder, and potato soup is always on that list. 

This soup uses Provolone and Swiss melted into the actual broth, which makes it deliciously cheesy, but I'd recommend garnishing your bowl with a sprinkle of sharp Cheddar if you're someone who just can't get enough cheese in their life!



  • 9 slices thick cut bacon, diced
  • 12 tablespoons butter
  • 2/3 cup all-purpose flour
  • 5 cups whole milk
  • 2 cups heavy cream
  • 1 cup buttermilk
  • 5 russet potatoes, baked, peeled and cubed
  • 1/2 cup scallions
  • 2 cups deli ham, diced
  • 2 cups Provolone & Swiss cheese cut into strips
  • 1 cup sour cream
  • 2 teaspoons coarsely ground black pepper
  • 1 teaspoon Kosher salt


  1. Cook bacon in a large skillet over medium heat until browned. Remove and set aside.

  2. In a large Dutch oven (7-quart) or large stockpot, melt butter over med-low heat. Whisk in flour until smooth (no lumps). 

  3. Gradually stir in milk, cream, and buttermilk, mixing constantly until fully incorporated and slightly thickened. 

  4. Add salt and pepper. Add in potatoes and scallions. Bring to a boil, stirring frequently, making sure to scrape the bottom.

  5. Turn heat down to a low simmer, cover and cook for 10 minutes. Add sour cream, ham, bacon, cheese. Stir until cheese is melted. Serve.


You can easily add more cheese to the top and place the soup under the broiler for 30 seconds to get that melty cheese look.

My father used to make a potato soup that was quite a hit with my daughters. His included corn, and I think I might add some when I make this. I love the addition of the cheeses, plus the suggestion of including some cheddar as well. The inclusion of both ham and bacon is another feature of this recipe. The list of ingredients mentioned that the potatoes are peeled, though in the video walkthrough the potatoes still have their skins on. Personally, I prefer leaving the skins on whenever possible.

This version of potato soup is so luxuriously rich and creamy, and is guaranteed to become one of your favorites. I like the surprising element of buttermilk in here - the little bit of tang and acidity helps to cut through the richness of the cream and the butter. Don't be intimidated by all the butter and cream, as this recipe makes quite a bit of soup!

This looks like a great potato soup recipe. It is decidedly cold here in South Africa right now and this looks like a lovely comfort meal. There is the best of everything in it. Bacon, whole milk, cream, buttermilk. With all of that it has to taste great and be satisfying. I'm definitely giving this one a try.
