Homemade Amish Friendship Soup

With this recipe for Homemade Amish Friendship Soup, you can either prepare a delicious, classically Amish soup for your family to enjoy for supper, or you can put together a dry soup mix in a jar to gift to someone special as a gift. What's so great about Amish friendship recipes is that they allow you to prepare some of your favorite dishes in an easily shareable form, so that others can make the same meals you love in their own kitchens. This easy soup recipe includes yummy ingredients like onion, lentils, rice and macaroni noodles, along with ground beef, making it a hearty dinner meal the whole family will love.

Cooking Time: 1 hr 20 min

Ingredients
  • 1/2 cup dry split peas, sorted and rinsed
  • 1/2 cup dried lentils, sorted and rinsed
  • 1/3 cup beef bouillon granules
  • 1/4 cup pearl barley
  • 1/4 cup dried minced onion
  • 2 teaspoons Italian seasoning
  • 1 cup small pasta, ditalini or tubetti
  • 1 pound ground beef
  • 3 quarts 3 quarts water
  • 1 (28-ounce) can diced tomatoes, undrained

Instructions
  1. In a 1 ½ pint jar, layer the first seven ingredients in the order listed. Seal.
     
  2. Remove pasta from the top of jar to be used later.
     
  3. In a large pot, brown ground beef and drain.
     
  4. Return cooked ground beef to the pot, add the water, tomatoes, and the remaining soup ingredients except the pasta.
     
  5. Bring to a boil, reduce heat, cover and simmer for 45 minutes.
     
  6. Add pasta and simmer for 20-25 minutes or until pasta, peas, lentils and barley are tender.
Notes
  •  Add other vegetables such as carrots, celery, onions to the soup.

I really enjoyed making this soup! My husband is not a "soup" eater but liked this so much. I was glad to come across this recipe. I actually had most of the ingredients on hand. I didn't have barley so I used rice instead. I added a little cayenne pepper as well. I also put half a bag of frozen corn too. I made homemade corn bread to go with it. A happy husband was my thanks! Does anyone know a really good cornbread recipe? Thanks!

I am always looking for new recipes to try, and especially ones for soup since my family really enjoys eating it. This would make a quick and easy meal. I like the idea of an Italian-style soup with vegetables, other than carrots, celery, and beans. I haven't used pearl barley before in a recipe so this should be interesting trying something new.

I can't have barley, but buckwheat groats make a great substitute. I like the idea of giving the dried ingredients as a gift. It would be a very nutritious and satisfying meal that anyone would love. It would be very warming for this time of year. When it is cold out, you can never have too much soup.

I like the name 'friendship soup'. Instead of canned tomatoes, I'll more likely use fresh tomatoes. Some finely chopped spinach should be good as an additional vegetable too. The combination of beef, split peas and lentils definitely makes this a high protein recipe! I've never really liked macaroni as a soup ingredient so I'm thinking potato would be an okay substitute.

Seems pretty starchy... Might just use the barley and leave out the rice and macaroni. Way too much starch! Just with the split peas or lentils it would probably have enough body. And 1/3 cup of beef bouillon granules? I do like the jar idea.

Yes, too starchy, and, with the beef bouillon, also probably too salty. The jar idea is the best part of this recipe. Putting the dry ingredients together ahead of time could help with time crunches later... but it needs more non-starchy vegetables added for better flavor.

Hi .. this is a super recipe to make ahead and store for those nites when it just has to be soup ! One quick trick I use that I wanted to pass along is ... to avoid the "separating macaroni from other ingredients" .. just place the macaroni in a small baggie and tuck it into the top of the jar prior to closing. Easy and quick ! Thanks for the recipe.
