On those chilly winter nights when you want to curl up with something hot, try this Creamy Ham and Potato Chowder. Nothing's better than a bowl of something creamy and comforting when it's cold outside, and this recipe is sure to hit the spot.

It's a rich and creamy soup filled with ham, potatoes, corn and more, so you know it will be just as hearty and filling as it is flavorful. This homemade soup is the perfect way to use up leftover ham or potatoes from a previous meal.

This dish is perfect for a quick weeknight dinner, lunch, or even as a potluck dish.

Ingredients

  • 4 slices bacon, chopped
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced very fine
  • 1 medium onion, finely chopped
  • 1 1/2 cup frozen corn kernels
  • 2 teaspoons fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 tablespoons flour
  • 2 russet potatoes, peeled and finely diced
  • 3 1/2 cups milk
  • 7 ounces boneless smoked ham steak, cut into inch cubes

Instructions

  1. In a Dutch oven, cook bacon over medium-high heat until it is golden brown and crispy. Remove bacon from the pan and drain on paper towels. Remove all but 1 teaspoon of the bacon fat from the pan and discard.

  2. Melt the butter in the same pan over medium heat and saute onion for 2 minutes, stirring until soft. Add garlic and stir for 1 minute. Add corn, thyme and salt and pepper and continue to toss for 1 - 2 minutes until coated with the butter.

  3. Add flour to the pan and whisk over medium heat for 1 minute until flour is cooked. Gradually add the milk and continue to stir until mixture thickens and begins to coat the back of a spoon. Add potatoes and ham and cook on medium for 15 minutes until potatoes are soft. Adjust thickness by adding more milk if you wish.

  4. Serve in individual bowls, garnished with the crumbled bacon.

Cheesy potato soup it doesnt get much better than that. This dish is such a comfort food for me and add that bacon and it becomes heaven. Bacon and cheese can fix almost any meal. This is a quick and easy version of this soup and I cant wait to enjoy it for lunch on the upcoming cooler days.

Cheesy Potato Soup

I love rich and creamy soups and I abhor waste so using leftovers to make this soup ticks all the boxes.

Creamy mushroom soup with plenty of onion is great. I have one recipe that also has buckwheat, making it taste richer by far.

i loved this recipe, and also made up the same soup with using left over baked herbal chicken and no bacon used 1/4 tsp tarragon and Italian seasoning. Don't have camera so no photo.

This is very similar to a corn and potato soup my father used to make. In reply to Rnbowgrl below, it seems chowder is a type of soup or stew made with milk or cream. The origins of the name seem to be a bit hazy, as it could be derived from French or English. The chowder itself is great. I don't care for fish chowders, but the corn and potato ones are delicious, especially with the addition of ham and bacon, like this one.

I've always wondered where the term chowder came from...do you know what makes a chowder? Maybe a thick soup? Either way I love that there are so many varieties of them. Being a huge fan of soup I love this recipe. Ham really isn't my thing but I do enjoy it in soups and well, potatoes are just good in anything.

I really enjoyed this soup recipe! It had the perfect consistency to it! However, I wasn't a huge fan of the bacon chunks. I'd leave those out.

This soup was great! The next time I make it, I think I'll leave out the bacon. Although that may not be a popular decision.
