These Snack-Worthy Parmesan Cauliflower Bites are easily going to become your new favorite go-to snack. This cauliflower recipe helps for you to still get that delicious crunch from you snack, but without having to reach for the potato chips. If you aren't a huge fan of cauliflower, you need to try this! This snack recipe gives you some truly delicious bite sized food without all the carbs. For anyone looking to reach out of their comfort zone when it comes to eating, this is an easy way to do it and still love what you're eating!

Ingredients

  • 1/2 head cauliflower, cut into bite sized florets
  • 1 1/2 cup panko bread crumbs
  • 3/4 cup finely ground Parmesan cheese
  • 2 large eggs, whisked

Recipe

  1. Preheat oven to 400F. Line a large baking sheet with parchment paper.

  2. Add panko and cheese to a large bowl and then mix together until thoroughly combined. 

    Pro Tip: You can use shredded Parmesan cheese and put it through a food processor until the crumbs are the same size as the panko bread crumbs.

  3. Dip cauliflower in egg mixture and then shake a few times so that excess egg drips off. You don't want to dampen your breadcrumbs with excess egg because then they won't stick to the cauliflower. 

  4. Roll in bread crumb mixture until fully coated and place on a baking sheet . You may need to press on the coating to help get it to stick to the cauliflower bites. Repeat until all cauliflower is coated. 

    Note: The Kikkoman brand for panko crumbs is preferred for even baking. 

  5. Bake for about 20-25 minutes until coating is a dark golden brown and crunchy.

This looks so tasty! I've made cauliflower bites before, but I've never made Parmesan ones. I love that it's only four ingredients, too. Super budget friendly

YUM! I would enjoy dipping these in ranch dressing (not the healthiest) or in buffalo sauce.

I love that cauliflower can be used for so many recipes! The vegetable adds a healthy spin to traditionally unhealthy recipes.
