Where have these Caramel Potato Chips been all my life. The homemade caramel recipe is so easy to make it's incredible. The crushed peanuts add a nice touch to an already great tasting snack. The rippled potato chips are definitely needed to hold up to the caramel without getting too soggy. The recipe just said potato chips, but I noticed in the picture that they were rippled. These are truly an indulgent treat.

Everything about this sounds so good. I'm wondering though, if I were to make a bunch in advance for say a New Years Eve party, would the chips get soggy from the caramel after a while or do you think they would hold up throughout the evening? Hmmmm...maybe kettle chips would be a better option. Either way, I definitely want to try it out!

Wow-sweet and salty to the max! I like the pretzel and chocolate candy/cookie treats, and I really love caramel. I don't know if I would make the caramel from scratch when jarred caramel sauce is so easy to buy and is so good. Plus that would make this delicious snack ready even faster!
