Mamma's Pasta e Fagioli

  • olive oil
  • 1 large onion, chopped
  • 5 garlic cloves, chopped
  • 1 can tomatoes
  • 2 cans chicken broth
  • chopped parsley to taste
  • salt and pepper to taste
  • 1 cup elbow macaroni, cooked
  • 1 can white kidney beans, drained and rinsed
  • grated cheese


  1. In a frying pan, heat up the olive oil and saute the onion and garlic until soft and fragrant.
  2. Chop up or lightly process the tomatoes and place into a slow cooker, along with the broth and sauteed onion and garlic. Add the parsley and a little salt and pepper and cook for about 3 hours on the low setting.
  3. Add the cooked macaroni and beans. Cook an additional 20 to 30 minutes on low. Serve with a bit of grated cheese if desired.
