Reuben Pie

Ingredients

  • 1/2 cup coffee creamer
  • 1 egg, beaten
  • 1 medium onion, chopped
  • 1 teaspoon mustard, sharp
  • 1/8 teaspoon pepper
  • 12 ounces corned beef, chopped
  • 8 ounces sauerkraut, drained
  • 1/2 pound ground beef, uncooked
  • 2 slices soft pumpernickel bread, crumbled
  • 1 deep dish frozen pie crust
  • 4 ounces swiss cheese, grated
  • parsley, chopped

Instructions

In medium bowl, combine non-dairy creamer, egg, onion, mustard, salt, and pepper. In large bowl, mix corned beef, sauerkraut, ground beef, and bread crumbs. Add first mixture and mix well. Place half of mixture in pie shell. Sprinkle cheese evenly over top. Cover with remaining mixture. Sprinkle with chopped parsley, if desired. Bake in preheated 375F oven for 35 minutes.
