Leftover Turkey Pot Pie

Change up your homemade chicken pot pie recipes with turkey! Leftover Turkey Pot Pie is a great way to get rid of those Thanksgiving leftovers and creates a brand new dish out of them. Simple to make, your family will love it.

Ingredients

  • 5 potatoes
  • 1 egg, slightly beaten
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 3 cups diced turkey
  • 2 cups celery, chopped
  • 1 cup cooked peas, drained
  • 1 cup Cheddar cheese, grated

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Cook & mash potatoes, or used leftovers. Stir in egg. Spread in well oiled 9-inch pie pan. Bake at 375 degrees F for 10 minutes.
     
  3. Combine mayonnaise and lemon juice, stir in turkey, celery, and peas. Spoon into potato crust. Top with cheese. Continue baking 15-20 minutes or until hot through.
