Fritos Chili Pie

Served in the bag or in a bowl, this flavorful easy chili recipe comes with a great crunch, courtesy of the Fritos corn chips that give the recipe its name. Ingredients

  • 2 cans (15-ounces) chili or 1 quart homemade chili
  • 4 bags (.75-ounces each) Fritos corn chips
  • 1/2 cup Cheddar cheese, shredded
  • 1 small onion, chopped
  • ketchup, to taste

Instructions

  1. Heat chili in medium saucepan.
     
  2. Meanwhile, cut a slit lengthwise down one side of each corn chip bag. Spoon chili equally into bags.
     
  3. Top with shredded cheese and onions. Serve with ketchup.

In Texas, we would never put ketchup on any mexican dish. It is chili, with or without beans, fritos (or any other corn chip--I like mine baked with less salt)onion and cheese. Preferably, cube the cheese. Mix warmed chili together with everything else, put into a 350 degree oven until the cheese is mostly melted. Serve with salsa on the side and a tossed green salad.

This is good for Gringos, but in New Mexico, we use red chile with or without hamburger meat, shredded Cheddar on top, then shredded lettuce and chopped tomato. Cheese always goes on the meat first, not ON TOP of the lettuce like so many places do. It goes on the hot meat so it can melt!
