Fritos Casserole

If you love Fritos, you'll love this dish. My Mom used to make Fritos Casserole at least once a week and the kids never complained. This mildly spicy dish is so cheesy you'll eat it up. This is one of the best casserole dishes that your family will love.

  • 3 tablespoons olive oil
  • 1/4 cup flour
  • 1/2 can (15-ounces) olives, sliced
  • 6 cloves garlic sliced
  • 1 can (10-ounce) Las Palmas Red Chile sauce
  • 1 can (29-ounces) tomato sauce
  • 10 1/2 ounces regular Fritos
  • 1 pound Monterey Jack cheese, grated
  • 10 green onions, sliced
  • 1 pound ground beef, fried slightly


  1. Preheat oven to 350 degrees F
  2. Brown the meat, set aside.
  3. Saute garlic in oil, add flour to make a paste. Add the tomato and Las Palmas sauce. Stir over medium high heat until slightly thickened.
  4. In a large casserole place a layer of each: fritos, meat, onions, cheese, olives and sauce, repeat. Top with Fritos. Bake uncovered  for 35 minutes or until heated through. Best on the first day since the Fritos are crispy.

I would put my meat bottom then sauce, onions, fritos, olives,and cheese. then repeat

Would like to try it, but would it hurt if I left chili sauce out. Maybe the mild salsa that was suggested would work.

Hi CMurph47, I think you'd be fine substituting the chili sauce for a mild salsa. Just realize it will alter the flavor of the recipe. Thanks for the feedback!

We do not like any Chili sauce. What can I use in place of the Las Palma Chile Sauce? This sounds delicious otherwise!

Don't like Chili sauce either but I bet a mild salsa would taste great!!

I've never had chili sauce, but when I make a recipe very similar to this, I use enchilada sauce. Not sure if they're the same thing or not.
