Stuffed Reuben Pillows
Nothing's better than a hot Reuben sandwich loaded with corned beef and sauerkraut. This recipe for Stuffed Reuben Pillows is a Reuben sandwich recipe unlike any other. The sandwich ingredients are stuffed inside refrigerated biscuits and baked, so the end result is a hot "pillow" packed with flavor. The recipe only requires a few simple ingredients, so it's great for when you have leftover corned beef or simply want a quick appetizer, lunch or dinner.

My family loves to eat corned beef and so they will hesitate if I make this Stuffed Reuben Pillows for them sans the sauerkraut as this ingredient is not commonly found where I live. Anyway the sandwich will definitely taste great without it.

These sound absolutely divine. I love Reubens and this is a great and simple idea for making a number of mini versions of them. I was really pleased that the writer was thinking along the same lines as I do, and included the use of some caraway seeds to help recreate the sense of rye bread. Unfortuately there's no such thing as rye Grands, though I wish there was. I'm definitely making up some of these.

These look great! I love reubens, but I have to admit that I hate making them. It seems like it takes so long to make each individual sandwich, browning them, and adding the dressing. This makes them in such a neat little packet, that it seems like it would be less work. What a genius idea!

I'm intrigued by this... but I'm not a huge fan of crescent rolls or refrigerated biscuits. Maybe I'll just stick with the rye bread!
