We love this Throw Together Potluck Salad so much, we make it whenever possible! What's not to love about a meaty, cheesy salad tossed in a homemade dressing? Not much, that's for sure! This easy potluck salad recipe is simple to throw together at a moment's notice so long as you have all the ingredients. What's great about this recipe is that many of the ingredients come in cans that can be stored for a while in your pantry, so just stock up and you'll be ready next time you need to bring a dish to a function. Buy your meats, cheese, and lettuce the day of, whip up the homemade vinaigrette, and you'll have a potluck-worthy salad that everyone will want a second helping of.

Easy

Ingredients

  • 24 ounces bag of iceberg lettuce
  • 4 ounces Genoa salami, cut into 1.5-inch strips
  • 4 ounces Provolone cheese, cut into 1.5-inch strips
  • 1 (16-ounce) jar pepperoncini, well drained, stemmed and slice in half lengthwise
  • 1 (14-ounce) can artichoke hearts, well drained and cut into quarters
  • 1 (14-ounce) can hearts of palm, well drained and cut into slices
  • 1 (5-3/4-ounce) can pitted black olives
  • Homemade Vinaigrette Dressing
  • Homemade Vinaigrette Dressing
  • 1 cup olive oil
  • 1 tablespoon apple cider
  • 1 tablespoon balsamic vinaigrette
  • 1 teaspoon Dijon style mustard
  • Salt & pepper

Instructions

  1. Mix all of the ingredients into a large bowl. Using clean hands is a great way to easily combine everything.

  2. Drizzle the salad with 1 cup of the vinaigrette (recipe follows). Toss mixture once more, and then add another cup of dressing (or less, if desired). Serve and enjoy!

  3. For the vinaigrette: Place all ingredients into a pint jar and close tightly. Shake to combine, and be sure to shake again right before serving. Any leftovers can be stored in the refrigerator for future use.

This potluck salad is a whole meal in itself. I like dishes like that where there is a bit of everything in it. Vegetables, starch and some meat. I always think that iceberg lettuce gets a raw deal as far as lettuces go as it is often not used but I like the crunchiness of iceberg and it is a perfect choice for this recipe.

Ok maybe it's just me but I've always thought hearts of palm was the same as an artichoke until I just googled it and found out that just wasn't the case at all....and they actually come from the center of the palm tree. (hence the name...lol) I'm such a fan of salads in any way I can get them and love that this is so hearty it's basically a meal by itself.

I see big antipasto type salads on restaurant catering menus all the time, and they aren't cheap! This is a great way to please a crowd without breaking the bank! The apple cider house dressing is so versatile, and is a great go - to recipe for many other salads. I just made it for a salad topped with grilled chicken, strawberries, and feta cheese recently and it was great!

I love, love, love this Throw Together Pot Luck Salad. Of course, when I serve it, I call it my Italian Antipasto salad. It has all the ingredients of a classic Italian Antipasto. Mixing it all into a salad makes it so much easier to transport to pot lucks, or serve at your own backyard bar-b-que. There is no limit though to the occasions that this salad will be a welcome addition to.

I'm always looking for easy dishes to take along to a potluck. This one totally fits the bill!
