Summer Salad

This isn't your average boring salad recipe. Summer Salad is one of those salads that taste amazing and leave you feeling full and satisfied. Even those who don't care for salad will go crazy for the bright ingredients in this green salad recipe. It's packed with rice, chicken, ham, pineapple, coconut, and more! A creamy orange dressing pulls it all together, adding an amazing taste and texture to the salad. Eat it for lunch or even a satisfying dinner.


  • 1 head lettuce, chopped
  • 3 cups cooked cold rice
  • 1 cup cooked ham, cut in 1/2 inch cubes
  • 1 cup cooked chicken, cut in 1/2-inch cubes
  • 1/2 cup celery, cut in 1/4-inch pieces
  • 2 pimientos, cut in 1/4-inch pieces
  • 1 cup pineapple, melon, or both, cut in pieces
  • 2 tablespoons shredded coconut
  • 2 tablespoons chopped peanuts
  • For the dressing:
  • 1 cup mayonnaise
  • 3 tablespoons frozen orange juice concentrate, undiluted
  • 1 teaspoon each salt and parsley


  1. Combine all ingredients except dressing in a large bowl.
  2. In a small bowl, mix together the mayonnaise, orange juice concentrate, salt and parsley.
