Golden Raisin and Broccoli Salad
This unique summer broccoli salad is one you'll crave even after summer has passed.
With just the right amount of sweet and savory, along with a great crunch throughout, this Golden Raisin Broccoli Salad is sure to be the highlight of the potluck menu this summer. Made with bacon, Cheddar cheese, red pepper, almonds and of course broccoli, among other ingredients this is one broccoli salad recipe that is anything but ordinary. Top it all off with a sweet, creamy and tangy dressing that comes together in just 3 ingredients. - Ingredients for Dressing
- 3/4 cup mayonnaise
- 1/4 cup granulated sugar
- 1 tablespoon balsamic vinegar
- For the Salad
- 1 pound fresh broccoli, chopped into small, bite-sized pieces, blanched.
- 1 cup golden raisins
- 3/4 cup sliced, almonds
- 1 small shallot, finely diced
- 1 cup shredded sharp Cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1 red pepper, thinly sliced

In a small bowl, whisk together all of the dressing ingredients. Set aside.
In a large bowl, toss the salad ingredients together. Pour the dressing over the broccoli mixture and toss to coat all the ingredients with the sauce.
Chill in the refrigerator for at least 2 hours before serving. Right before serving, give the salad another good toss to recombine any dressing that may have settled at the bottom.
