  • It's best to make this several hours in advance so that the flavors have time to blend.

     

  • I usually double this recipe as 1 regular can of pineapple chunks is approximately 2 cups. 1 can of oranges is approximately 1 cup, so I get two. And I buy my sour cream in a 16-ounce container to have my 2 cups of sour cream. This eliminates a lot of measuring.

     

  • The colored marshmallows are festive during the holidays. I use the rabbit shaped ones at Easter.

Ingredients

  • 1 cup pineapple chunks, drained
  • 1 cup mandarin oranges, drained
  • 1 cup flaked coconut
  • 1 cup small marshallows
  • 1 cup sour cream

Instructions

  1. Mix the sour cream with the coconut.
     
  2. Add the pineapple, then stir in the marshmallows.
     
  3. Finally, add the mandarin oranges and blend slowly.  I add these last so that they aren't over-mixed and break apart.

"foodlover", these salad recipes with fruit, marshmallows, and sour cream do seem strange, but they are wonderful! This is the kind of recipe that you take a small bowl of it, then go back for more! I will be making this around Easter time.

I didn't know what to think when I read that this recipe had marshmallows in it. I spoke to my friend who said that she has eaten salads which contain marshmallows and it was delicious. So I guess I will be trying it! I am very skeptical but I see from the comments marshmallows are quite commonly used. I wonder what they are going to taste like mixed with sour cream and left to soak in it? Nothing ventured, nothing gained so here goes!

It helps adding a can of fruit coctail drained,2 tbsp. sugar and sliced bananas for a more complete dessert.

Remember having this when I was a kid at Thanksgiving and Christmas. My Aunt called it ambrosia. Loved it then and now. When I make it now I start with the basics and add to it, cherries, bananas, or fruit cocktail and always add pecans.

For the lactose intolerant family members, instead of sour cream I use a tub of 16 oz. thawed whipped topping and stir in 2-3 Tablespoons of Mayo or Miracle Whip to thicken and stiffen the topping before adding fruits and marshmallows of choce.

My Mother used to make this, and she would make it the night before it was to be served so that the marshmallows would sort of melt with the sour cream. This sweetened the salad plenty.

This is a wonderful salad,easy to make, and delicous and make it at least once a week.

Hello again meadowview1, Thanks for your comments. Yes actually you could freeze this recipe, though it's never going to be as fresh as when you just made it. But most fruit dishes can be frozen. Thanks, and sorry we don't have all the nutritional facts.

Could this be frozen? My husband and I are a twosome again..but love this salad. Just thinking it might freeze..in several smaller containers to have this treat later? Sure wish we had the cal, fat, and fiber count in the recipes..hubby is a cardio patient and we have to keep this info..

A similar recipe has been in my family for years. In my recipe, I add 1 cup of finely chopped pecans and about a jar of maraschino cherries cut in half. We usually have this at Thanksgiving and Christmas.

tealady5588: To sweeten the sour cream without the coconut, just add a few tablespoons (or to taste) of powdered sugar to the recipe. It blends in very well. I always use a little powdered sugar along with the coconut every time I make this dish. It's great!

This recipe has been n my family since i was little and You always have to use sour cream, We always had it on thanksgiving and xmas. Still to this day i make it and my daughters make it i was so suprise to see a recipe for it. ENJOY !!!!

This is a great salad. The version that I make includes a cup of drained very cherry fruit cocktail. I like the idea of using colored mini marshmallows for the Holidays and the mini bunnies for Easter. This is a staple at our family get togethers.

on the 5-cup I have learned we use cool whip instead of sour cream and it is much, much better,please try it. I also add cherries sometimes,mmmmm good.

I make this recipe and everyone loves it but one who doesn't like coconut. How could I change it so the sour cream does get sweetned without the coconut.

In our recipe mother had from her grandmother, it used a flavored jello pudding instant with less sour cream, usually a vanilla or banana.

I have been making this recipe for over 30 years and everyone enjoys it every time.

I have been making this for years but, I have added a couple of ingredients that everyone loves to it. I add cherries and pecans. They give it a better flavor.

I have made this several times but the recipe that I have uses whipped topping instead of sour cream and you can use fruit cocktail if you don't have all of the other canned fruits available. I usually use the miniature white marshmallows but you can use the colored one also.

My mother made this when I was a child. I now have grandchildren of my own and they love this. It's my favorite potluck dish. When carrying it to a supper I put it in an ice bucket. Keeps it cold without refrigeration for a long time.

Made it for our luau potluck at the senior center. Everyone liked it with nothing left to take home.
