Ritz Cracker Eggplant Casserole

Serves: 6

  • 1/2 container of golden mushroom condensed soup
  • 1/2 cup mayonnaise
  • 1 egg, beaten
  • 1 tablespoon onion, grated
  • 1 cup cheese, shredded
  • 1 medium eggplant
  • 3/4 cup crushed Ritz crackers, about 15
  • 1 tablespoon butter
  1. Peel and dice eggplant, and cook in boiling, salted water for 10 minutes.
  2. Mix soup, mayonnaise, egg, onion, and cheese with parboiled eggplant. Place in a greased 1 1/2 quart casserole and cover with crackers.
  3. Bake for 25 minutes at 350 degrees F.

Instead of eggplant, you could try zucchini, summer squash, or even portobello mushrooms. That mushrooms would pair well since this recipe already calls for mushroom soup! Just remember that vegetarians need to get adequate amounts of protein from non-meat sources, which is why tofu is a good meat substitute. Recipes like this are very tasty but maybe adding some beans or dairy on the side would create a full meal with protein!

I'm thrilled to find this recipe as my daughter is new vegetarian! She doesn't really like tofu so I'm trying to find other good recipes. She does like eggplant and I think this might appeal to her. Eggplant is not always available at our grocery store. Can anyone recommend a good substitute in addition to the zucchini that was previously mentioned? Thanks so much.

So, you use Ritz crackers instead of breadcrumbs right? never heard of that before but sounds like a good way to cook aubergine. Thanks for the recipe!

We had some Cloud 9 eggplants from the garden that we needed to use up, and low and behold two open 1/2 sleeves of stale ritz. I didn't bother to peel them because they are white eggplants, and using what we had on hand, I used shredded taco blend cheese, cream of celery instead of mushroom, and added 1/4 of parmesan cheese to the crackers. We also added omitted the onions and just added a dash of dried minced onions, some red pepper flakes, Italian seasoning and black pepper to the mix. It so was so light and fluffy and delicious! This is something I will definitely make again.

Why cook the eggplant? Won't it cook in the casserole?

I used cream of mushroom instead of golden-think you could taste zuchinni more.

I made it and really liked. I changed Eggplant to Zuchini, used Motzerella cheese. And there was no mention what to do with the butter-so I melted and put on top of crackers before putting in oven.

@Crafter, I think its pretty much whatever cheese you'd like. I suggest maybe a monteray jack, cheddar or mozzarella, but that's just my opinion. Thanks for the comment.

I tried this casserole and it is very good, I doubled the recipe, butter the dish and drain the eggplant in a clollander while you mix the ingredients, bake uncovered. makes about 6 servings. it was not soggy. Josie

Tried it and I agree with other comment it was too soggy .needed more filling to it.

Might be the way I cooked it, but it was very soggy and very blah. Wouldn't make it again. Needs more zip!

Sounds easy and good; however, the ingredients list BUTTER but the instructions do not. Where is the butter grease the dish or to melt and drizzle over the cracker topping?

I am always looking for different casseroles to try out.Iam normally invited to different gatherings and i am always ln need of a different dish to take something unique to take that nobody else has ever bought.This particular recipe does the job very well.I have fallen in love with this Ritz Cracker Eggplant Casserole. Sounds and looks delicious. Cant wait to try it.
